Botan nabe is a stew made by simmering mild domestic wild boar (from Hiroshima Prefecture) and seasonal vegetables in a broth based on a combination of white and red miso.The longer you simmer the muscular boar meat, the softer and more flavorful it becomes. The fat is not heavy and adds just the right amount of richness to the light meat flavor, making it perfect with alcohol!
